Join Chef Dana Reinhardt in exploring the incredible bounty of food, wine and olive oil in Lazio, Italy. Casale Poggio Nebbia, is situated on a stunning vineyard and olive farm near Tarquinia and Tuscania, Italy.

We will harvest seasonal produce from vegetable gardens (27 varieties of tomatoes!) and use meat from the heritage breed cattle, pigs and chickens located near the property. We will learn to make bread; master the tricks of hand-made pasta and forage for wild herbs and mushrooms in the surrounding woodlands.  All this with aperitivos by the pool!

The trip will also include visits to to Sergio Mottura Winery for a winery tour of the Champagne cellars located under the medieval town of Civitella d’Agliano; an extensive wine tasting; finishing with a wine and food pairing dinner in Sergio’s Wine Hotel, La Tana dell’Istrice. Sergio Mottura

Guests will marvel at the beauty of the “Dying City” of Civitia di Bagnorergio.  The entrance is a huge stone passageway cut by the Etruscans 2500 years ago.  We will enjoy a fully guided tour, finishing with aperitivos in the beautiful courtyard. Civita di Bagnoregio

We will enjoy a guided tour of historic Tuscania with a visit to the local market.  Then it’s off to lunch in the medieval Abbey of San Giusto with a meal prepared by renowned Chef Mark Medina-Rios and a tour of the spectacular site. Guests will also get to make Pecorino and Ricotta cheese with artisan cheese maker Francesco Marras at Casa Marras.  A hands-on afternoon with lots of wine and cheese!

Welcome Reception & Dinner (6pm-9pm): Welcome cocktail (Aperitivo: Prosecco) reception and introduction to the program, followed by dinner prepared by Chef Dana Reinhardt with wine and bounty from the farm.

Tuesday – September 18, 2018
Continental Breakfast (8:30 am-9:30 am):
local cheese, boiled eggs, bread, sweet bread or baking, fruit and yogurt, honey, jams, coffee, fruit juice, coffee, tea

Day Trip (10am-1pm) Tour the grounds and vineyards.

Lunch (1:30pm-2:30pm): prepared by Chef Dana Reinhardt with ingredients from the farm.

Cooking Class (4pm-7pm):
Fresh fettuccine

Salad and vegetable dish from the bio-dynamic gardens.
Vanilla panna cotta
Poached figs with mascarpone cream

Dinner (7pm-9pm): Fettuccine with pesto, salad and vegetable dish, house cured prosciutto, poached figs with mascarpone cream.

Wednesday – September 19, 2018

Day trip (9am-2pm): Excursion to Casa Marras. Making Pecorino and Ricotta, cheese tasting and wine with lunch.
